Today we put on some magic. Today it's about not wasting and enjoying a more controversial part: the brain. In our case, it's pork brain. Yes, I know, you're going to make faces. Patience, my dears, the result is an absolutely delicious breakfast/brunch!
We will use simple ingredients. We'll enjoy green and crispy onions, the gift of spring, intense yellow eggs with a summer scent, the sour taste of toasted bread that reminds us of autumn and the pork brain, which makes us think of winter. The organs, although sometimes left aside, are a real source of flavour for food, and when they are prepared to complement the dish, they are put to maximum value.

Destul cu palavrageala. Ingredientele:
- 400g fresh pork brain
- 2 finely chopped green scallions
- 5 eggs
– 30g smantana grasa (de la 25% in sus)
– 40g unt
– 2 felii de paine prajita
- salt & pepper
Put 20g butter in a pan and add the finely chopped pork brain. Let it fry on medium heat for about 10 minutes, then add green onions, salt, pepper and put a lid on the pan. Reduce heat to low for another 15 minutes, stirring occasionally so it doesn't stick.
In a separate pan prepare scrambled eggs (indicated would be a smaller pan, but with higher edges).
Add the remaining 20g butter and let it melt. In a bowl scramble the eggs and when the butter has melted, reduce the heat and add the eggs. Stir so that the eggs cook slowly, and when we reach a satisfactory texture, turn off the heat, pull the pan off the hot stove and add a tablespoon of sour cream, and sprinkle some salt and pepper. Ready! We only have the serving part and we can enjoy our fantastic dish.
Toast a slice of bread and pour half of the scrambled egg mixture, and the icing on the cake is the brain that comes on top. It is easy to serve, but all the creamy wonder fits perfectly with the crispy bread, so it will be hard to stop munching. Yes, munching!
